Enjoying Brazilian Cuisine!

Hello everyone! My heart is so full today.

For starters, it’s a gorgeous sunshiny day in the Little Rock area. Also, I’m previewing Beck’s new album, Morning Phase on npr.org/music and it’s so amazing! The best part: I’m down to 11 WEEKS until I graduate with my MBA! I can’t believe how fast these past two years have flown by. So many things have changed in such a short time. Life really does move quickly, which is why my new mantra is “If you want something in life, GO GET IT! Don’t wait. Don’t hesitate. Don’t doubt.” I’m beginning to apply this to my everyday life and so far, it seems to be working.

I’ve been juicing again, too! Only in the morning for now, as I’ve increased my workouts and I’m much hungrier. I’ve been running four-five times a week for around 40 minutes and lifting weights. Please let me share my latest, favorite juice combo with you now:

*Treats acne, inflammation, hormonal imbalance, detoxes*

-1 Beet, including the leaves

-3 leaves of Kale

-3 carrots

-2 tablespoons ginger

-3 celery stalks

-1/2 a lime

-3-4 strawberries, including leaves (these are so good for you!)

Juice ingredients and pour into glass. Add 2 tablespoons of Chia Seeds and 1 teaspoon of Maca Powder.

This juice has really cleared my skin up! I was having major issues, ignited by stress. It is also making me feel better, you know? I have so much more energy in the mornings and I am more productive when I do good things for myself like this, at the start of my day.

So, I’ve been working on my professional career outlook since I’m approaching graduation. I think it’s time for Alex and I to leave our comfort zone of sweet little Arkansas and venture out! We are excited and nervous about moving somewhere “big” next. In between, we have been doing a lot of traveling, which has only fueled our feelings of adventure.

Beautiful European Town in Heart of Mexico!

This past November, we traveled to Guadalajara, Mexico for a week. We also stopped by San Miguel de Allende, a beautiful european town outside of Mexico City. It was a cultural delight. I highly recommend this quaint little town for a romantic vacation, girls trip, or just to enjoy the beautiful scenery and euro/mexican culture blend!

Happy New Year and a Juice Recipe!

Good afternoon bloggers!

It’s been a long time since I posted, my apologies. Since my last post, many things have occurred:

  • I finished mImagey first semester of graduate school in the MBA program
  • I GOT MARRIED
  • I enjoyed Christmas with my loved ones
  • My new Brother and Sister-In-Law from Guadalajara stayed a week with us (Las extrano MUCHO!)
  • Arkansas had it’s first white Christmas in a very long time
  • We rang in the New Year in Eureka Springs
  • Lastly, I went Vegan!

Thus, I’ve been a busy little lady. I am happy to say that I have been 100% Vegan for six straight days now… and I LOVE how I feel. Unfortunately, I haven’t had much time to work out, but I am looking healthier already. I am also juicing in place of one meal a day. My mom bought us an awesome juicer for Christmas, the Breville Juice Fountain from the documentary Fat, Sick, and Nearly Dead. It rocks. Allow me share my favorite juice recipe now:

Green Apple and Carrot with Ginger

(Makes 4 Servings) 

5 Green Apples

10 Carrots

1-2 knobs of Ginger

Handful of Green Kale

I hope you enjoy this recipe as much as I do! It fills two tall glasses perfectly to be enjoyed with your loved one. Juice is packed with the most nutrients immediately after it is made, so drink it quickly! It’s also best to start juicing with fruits and vegetables that you enjoy the most.
