Well its that time of year again: St. Patty’s Day. Everything is green today, except the snow and slush that blanketed Arkansas this morning. It was a surprise considering how warm it was this past weekend.
And what a weekend I had! My husband and I ran our first race together Saturday morning. I am usually the runner out of the two of us, but I forgot how fueled he is by competition! I ended up getting second in women’s age division of 20-somethings by attempting to keep up with him haha!
We then met up with gorgeous friends to celebrate St. Patty’s day with at a local parade in downtown Little Rock. All in all, it was one of my favorite Saturdays in quite a while.
I’m getting so close to graduating with my MBA I can’t stand it! So much free time will be savored after this. I’ll definitely be cooking and blogging much more. AND TRAVELING!!!
So, back to the point of this post… GREEN. Here is my favorite green smoothie that I enjoy at least once a week for breakfast, but you can also have this smoothie at any point in your life! It satisfies sugar cravings, balances your hormones, makes you feel full, and gives you lots of energy to get out the door and take over the world! I hope you all have a safe and happy St. Patty’s!
1/2 cup coconut milk
1/2 cup coconut milk yogurt
1-2 cups spinach
3/4 green apple
2 tbsp coconut oil
1 tbsp chia seeds
1 tsp Maca Powder (optional)
1 cup ice
